Braised Ham in Honey Sauce (蜜汁火方)

Jia Hua Ham (金华火腿) is known across the whole China as the best ham. This dish uses only the best part of Jin Hua Ham, a small portion at the waist. Then steam it with a lot of rock candy for a long time until it is almost like melting. Also some sweet soup should be produced during the steaming. The dish usually is served with the Ham and the soup on a plate plus some lotus plumules or cherries. Just a small bite on the ham, your tongue will be instantly be surrounded by a great deal of sweetness. But soon the salty flavor of the ham will creep up. Mixed with the sweetness, the taste is really unique and unforgettable. The lotus plumules or cherries in the sweet soup would also taste very delicious.
